Bread By Us is a locally owned and operated bakery, situated in the Hintonburg neighbourhood. They are known for their pastries made from croissant dough (nicknamed snails), foccacia, baguettes, sourdough and buttery milk bread. The on-site espresso bar doubles as a lunch counter with grilled-to-order sandwiches, both vegetarian and otherwise. Supporting local producers, sandwiches feature meat from Kingston-based Seed to Sausage, vegetables from nearby farms and local farmstead cheeses. The capicola – made with roasted garlic mayo, Swiss and greens – is a favourite.
Step in to Bread by Us and you’ll find some of the happiest people in the city baking breads and making coffee behind the counter. While bread is their specialty, coffee is also served with just as much pride. Using roasted beans from Happy Goat, each cup is carefully prepared using a Chemex machine, which is designed to extract the beans’ unique flavour profile and showcase the complexity of different roasts and blends.
Sourdough breads are the star attractions at this small-batch bakery. You’ll also find pain au lait, croissants, scones and other baked goods, including some sugar-free and vegan products. The espresso bar serves up fair-trade java roasted by the nearby Happy Goat Coffee Company, as well as loose-leaf tea. The Suspended initiative – which lets you pay for a coffee or pastry in advance for a future customer who may be short on cash – is part of the bakery’s progressive ethos.
