Perfect for fajitas, flank steak has good beefy flavour yet it's one of the leanest cuts available. The key to making flank steak tender is slicing the meat across the grain.

A quick recipe for flank steak fajitas with peppers and onions

Flank Steak Fajitas with Peppers and Onions

  • Preparation time: 10 minutes.
  • Cooking time 20 minutes.
  • Serves 8.

Ingredients:

  • 1 kg (2 lb) flank steak
  • 10 ml (2 tsp) paprika
  • 7 ml (1 1/2 tsp) kosher salt
  • 7 ml (1 1/2 tsp) ground cumin
  • 7 ml (1 1/2 tsp) dried oregano leaves
  • 5 ml (1 tsp) ground chipotle chilis
  • 2 ml (1/2 tsp) ground black pepper
  • 2 ml (1/2 tsp) sugar
  • 15 ml (1 tbsp) canola oil
  • 1 red pepper, quartered lengthwise, stemmed and seeded
  • 1 green pepper, quartered lengthwise, stemmed and seeded
  • 1 large onion, sliced 1-cm (1/2-in) thick
  • 8 flour tortillas (20-cm/8-in diameter)
  • 8 small lime wedges
  • 500 ml (2 c) of your favourite low-sodium salsa (optional)
  • 175 ml (3/4 c) reduced-fat sour cream (optional)

Instructions:

  1. Heat a grill to medium-high heat. Pat the steaks dry with paper towels.
  2. Mix together the paprika, salt, cumin, oregano, chipotle, black pepper and sugar. Scatter the spice rub all over the beef. Let stand at room temperature for 20 minutes while the grill heats up.
  3. Oil the peppers and onion slices and set aside.
  4. Spritz the tortillas with a little water and wrap in foil.
  5. Grill the steak for five to eight minutes per side for medium-rare to medium-done (60°C to 70°C, or 135°F to 145°F on an instant-read thermometer). Remove from the heat and let rest for five minutes.
  6. Meanwhile, grill the peppers and onions until grill-marked but still a bit crunchy, about five minutes total, flipping the onion slices carefully with a spatula.
  7. Grill the tortillas, packed in foil, over a low-heat area of the grill until heated through, two to three minutes per side. Set aside and keep warm.
  8. Remove the peppers and onions from the heat and slice into thin strips. Arrange on a platter.
  9. Cut the steak across the grain into thin slices and arrange on the platter along with the lime wedges.
