What would you do if your best friend called and asked you to leave your job? In 2013, Taylor Burnham contacted his friend Scott Swanson, who worked aboard a yacht as a chef, and pitched an idea that would change their lives: would Scott relocate to Vancouver to help open a restaurant with a menu sourced entirely from local producers?
Scott said ‘yes’. He left his job and the sparkling blue waters of the Mediterranean to join forces with Taylor and two others: chef Ryan Reed and bar keep Mat van Dinther. Together, the foursome founded Nomad, a relaxed, affordable and ethical fine-dining restaurant on Main Street in Mount Pleasant.
Nomad’s owners work alongside each other each day. Arrive for a local beer or nutritious meal and rest assured all four talents have provided for your fantastic evening – from Taylor’s warm welcome to Mat’s wine pairing to Scott and Ryan’s foraged mushrooms in your soup. The Nomad dining experience is earnest, holistic and moreish.
Nomad is a food lover’s paradise. Located on the ground floor of a modern building, the West Coast-ish, farm-to-table restaurant boasts smooth concrete floors, high ceilings and well-spaced tables, which make for easy maneuvering within the industrial dining room. Intimate table settings and delicately plated dishes make up for such expansive decor. Tip: make a reservation ahead of time and request a table on the lower level.
